Only one thing is promised.

I've erased this entry and started over a couple of times now because I don't know how to begin. I've worked at an elementary school for their before and after care for about 7 years of my life before landing my current job. I loved my job and my favorite part was the kids. I had a couple of the parents laugh and joke around with me and one in particular that was always so nice to me. His name was Garrett Blagg. I was in the midst of trying to quit my job and find a full time job that would pay more and have "benefits" and Garrett helped me. He listened to me vent about my current situation and how I wanted to get out ASAP. He even took my resume and had people at his job review it and give me feedback on how to improve it in order to get a new job. He would constantly come to pick up his sweet, beautiful. blue-eyed daughter, yet let her play for around 30 minutes even after he arrived, just so she could have fun with her friends. He always put his family first and cared about his daughters immensely. (He had another daughter that was a couple years younger, just as beautiful) In fact, I just read over some e-mails from him, one of them saying the following:


He truly cared for his kids, more than anything. They are now both in elementary school and having to deal with heartbreak. A couple days ago, I received a text from my former boss saying that he had passed away. He was very young and I was in shock. I dug around the internet and it was true. This is the last email I received from him and I can't stop wishing that I could just email him back. If there's one thing on this Earth that's promised, it's that everybody has a time, when it's their time to go, and there is nothing we can do to change it. I hope he is no longer in pain and rests in peace, watching over his daughters.

Homemade Tzatziki Sauce!


I was really in the mood for some chicken tacos and was really craving Tzatziki sauce so I thought, why not make both? One fun fact that I learned was that the Greek yogurt, Chobani, was not actually made in Greece, but actually in Turkey! The more you know.

I scoured the internet looking for a great Tzatziki recipe and I found a couple but tweaked it a little. I had made Tzatziki sauce before but it ended up really thin and was more runny, than a dip. The recipe is down below. Enjoy! Let me know if you end up making it!

Makes about 3 1/2 cups

Ingredients:
3 Cups of Greek Yogurt 
1 Garlic clove, minced
1 Tablespoon of fresh baby (or regular) dill
1/2 of a large lemon
1 Large English Cucumber (seedless)
salt & pepper to taste

Directions:
1. Cut up the English cucumber into cubes and put into a strainer. Sprinkle some salt and cover with a few paper towels and put something heavy on top. Cucumber has A LOT of water so it will make your sauce either thin or thick; This will prevent it from being thin. Leave it in the strainer for an hour while all the water is being drained out. I left mine in the sink and put new paper towels after 30 mins. 

2. Once that is complete (I was cooking my chicken while I waited) I put that into my ninja processor along with the dill, garlic, lemon juice, and salt. Blend that really well.

3. Once that is really well blended, add in the Greek yogurt and let it blend of a few minutes. I wasn't timing mine but if I had to eyeball it, I would say about 5 minutes. 

4. Add some more salt and pepper to your liking and continue to blend. 

5. Refrigerate for a couple hours and enjoy! 

You can pretty much eat it with anything as I use this dip for anything I find the craving for!

Time Discovers Truth.

It never ceases to amaze me how the truth always comes out. What you believe to be the truth could be a complete lie. Lies can only go so far until the truth eventually reveals itself.

I absolutely believe that everything happens for a reason and I also believe that God sends us signs when we need it the most, we just have to be paying attention. When faced with a tough decision or needing guidance, there are signs everywhere. That house that you were looking to buy could have been bought by somebody else and the sign could be that it's not time to move... or God saying "this is not the house for you, I've got something better." That relationship you wanted to commit to could turn out to be the complete opposite of what you were hoping for when you hear the real truth about them from a friend at work. This is God's way of saying "This is not the one for you, I've got something better". Every path in life is a road to a new "pit stop", whether it be a new celebration or a new lesson.

Lessons are often the difficult parts in life. Many times it can lead to a new life change or a new outlook on life. When learning the truth within time is when the greatest lesson of all is learned. You discover that person is not who they say they were and have a new view of who they are. Everything you once believed was a lie, whether it be the fact that they buy designer bags when they don't, or that they are cheating on their spouse when they say they aren't.

You can't stop people from lying. But you can give time to discover the truth because the truth always comes out.

Choices.

You only know so much about a person as how much they choose to tell you.

This really makes me think. Somebody could be living a whole other life in this world and I wouldn't know about it because they don't choose to tell me. There are a lot of things that many people choose not to tell others and for good reasons. It makes me really wonder what is it that people are hiding. You could think you know somebody inside and out, yet still not know them. Me, for example. I choose to tell people certain aspects of my life but you could never tell what is going on in my personal life because I have learned to cover it up very well. I could be in office laughing all day, but then go home and cry in the car and nobody would ever know.

Life is all about choices. What you choose to tell and what you choose not to. Sometimes either can get you into trouble. But we have to decided whether or not it is worth the price. Some people are worth the truth, no matter the consequence, and others are not.

Your past molds you into who you are today. Your choices have gotten you to today. Everyday that you wake up, make the right choice. Trust the right people. Choose your life how you want to spend it.
