4 bell peppers halved - one of each color, diced into bite-size pieces
1 medium onion, diced small
2 tablespoons of oil
2 hot dogs
1/4 cup shredded cheese for topping
salt and pepper for taste
Directions:1. Dice half of each of your bell peppers into bite-size pieces. Toss them into a hot pan with 2 tablespoons of oil. Let them sear for about 5 minutes, depending on how soft you like them.
2. Toss in your diced onion and let it sear for about 2 to 3 minutes, until translucent.
3. Cut up two hot dogs into small pieces and toss into the pan. Let it sear for about 2 to 3 minutes as well.
4. While your ingredients are searing, beat 4 eggs and season with a little bit of salt. Pour eggs into your pan and cook to your desire. I like mine a little bit runny, not fully scrambled. You can even make it into an omelette if you want to.
5. Top with some shredded cheese and you're all done! Enjoy!
